Enjoy a protein-rich salad with a nice combination of nuts and vegetables.
1 cup Quinoa
1 cups boiled chickpeas
½ diced cucumber
½ medium diced onion
¼ diced red bell pepper
¼ diced orange bell pepper
¼ diced yellow bell pepper
2 Medium diced tomatoes (or 1 cup sliced cherry tomatoes)
¼ cup chopped walnuts
Salt to taste
½ tsp freshly ground black pepper
1 freshly squeezed lemon juice (May add more lemon for a burst of flavor)
Rinse and boil Quinoa to keep aside for cooling.
In a large bowl, mix all of the ingredients into cooled quinoa.
Keep in fridge for about 1 hour and serve cold.
